Cupcakes to the Rescue
I don’t know about you, but at our house, we celebrate any joyous occasion we possibly can! From births to graduation, a job well done or a new tooth, we love the art of celebrating! And, often that celebration will include cupcakes!
Recently, our granddaughter found herself spending the night with Bee and Poppy (that’s our grandparent names) on her eight month birthday! Well, of course that called for cupcakes!
A trip to the pantry and we were set to bake. We almost always have a box of Pillsbury Funfetti cake mix on hand and typically there are some sprinkles of some sort as well.
I followed the directions on the box for the cupcakes, but I have a little twist I like when making these. I add an extra 1/4 cup of water and a small packet of instant vanilla pudding. Sometimes I’ll add a teaspoon of either vanilla or almond extract as well for extra flavor.
We topped them off with milk chocolate icing (because it’s what we had on hand) and a few Valentine’s Day sprinkles! They were quick, yummy and someone enjoyed them an awful lot!
