Pretty Pancakes Make Perfect Dinner

Sometimes breakfast for dinner is just the ticket for tired families, especially when it’s pancakes!

At my house, homemade pancakes with fresh strawberries, warm syrup and a dusting of powdered sugar is the perfect exclamation point on a long day. Additionally, you can serve with a side of center cut bacon and juice or milk, and it’s a filling meal that kids will rave about! Sometimes I’ll even serve it on china for an extra special touch.

Homemade Fluffy Pancakes

2 cups self-rising flour
2 tbsp sugar
3 eggs
4 tbsp melted butter
1 1/2 cups milk
1 tsp vanilla flavoring

In medium mixing bowl, beat eggs with whisk just until yolks are combined. Add butter and milk. Stir in vanilla. Add to dry ingredients and mix with the whisk until combined. Do not overmix. You will see some small lumps.

Heat griddle to 325 degrees and use 1/4 measuring cup to pour batter onto griddle. (Note: I make “baby” pancakes for the youngest kiddos and they love it!) When you see bubbles on the pancakes, it’s time to flip. Don’t leave them unattended as they will cook fast. Place on plates and top with strawberries. Drizzle with warm syrup and lastly, sift a dusting of powdered sugar over the top. ~ Serves 4-6 people.
